Beat 8 oz cream cheese until light and fluffy. Beat in 1 can sweetened condensed milk, 1 egg, 3 tablespoons lemon juice, 1 teaspoon vanilla until smooth.
Put 1/2 to 1 cup fresh raspberries in the bottom of 2 oreo pie crusts (i.e. 1/2-1 cup in each crust) pour the above filling equally in each pie and bake at 325 for 35 minutes.
In saucepan melt 2/3 cup semisweet chocolate chips with 1/2 cup whipping cream. After removing cheesecakes from oven top with chocolate mixture.
It is soooo good and I usually don't like cheesecake.

i will have to try this. i remember you posted blueberry muffins on your blog once and i made them and they were a hit.
I don't think that was me...but Andy makes amazingly good blueberry muffins...
